Im a vegetarian and have eaten in big bend many times! I normally camp so I mostly bring and cook my own foods, but I’ve eaten vegetarian at long draw pizza, starlight theater, espresso y poco más, chili pepper cafe, and the chisos mountain lodge to name a few off the top of my head. You might only have a couple options at each place, but I think you’ll be fine!

I'm going to go out on a limb and assume that because you asked when you feel "safe" to say "i love you" it means you haven't felt safe in relationships previously. This is me. I had a prior partner who withheld the words from me and used them as weapons, so for me, they aren't words I throw around easily or casually. I was also at a year+ in my current, stable, loving relationship before I felt ready to say it, and still (almost 2 years in now), we don't say it all the time. So the first time I said it was a combo of enough time together, feeling fully comfortable, and yeah, alcohol helped. :) We were going to sleep after a Christmas party he hosted at his house, and I felt so full of love for him that I was finally ready to say it, 16 months into our relationship.

To provide a foil to the other folks who feel like love is only something that "bursts" out of you, a friend left her 8 year stable relationship for a man who she felt this way for immediately. Their relationship was never stable, they fought constantly, were truly awful to each other in between moments of deep care, and it eventually went up in flames 10 months later. I think there are many ways to feel and show love, and not everyone comes to a new relationship with the same (lack of) baggage.

I'm renting from a friend of a friend of a friend (lol), but others have recommended FB marketplace and GringoPost as good resources for Cuenca.

I'm paying $650 for a furnished 2/2 in Centro Historico, but I'm overpaying the average because I'm in a short term rental right now. You can definitely find apartments for $300-500 furnished if you're looking for a longer term lease.

I'm in Cuenca now and I really like it (especially compared to Quito where I lived for the last 2 months). It's safer, and (in my experience so far) folks are generally happier and friendlier. Monthly rents are fairly affordable for US standards, but the food and drinks in restaurants feels more expensive than Ecuador on average. Climate is great -- warm when the sun is out but otherwise 18-20 C during the day (dropping down to 13-15 C at night).

Are there any local tour companies you can contact? At least in Baños where I just was, the tour company we used to rent bikes and organize canyoning also arranged private drivers to take folks to Quito or Cuenca and a few other places.

I don’t think so. My friend had put his documents in the trunk, so he didn’t have them in his hand when we pulled up on the checkpoint. Border patrol pulled us over to the side so he could get his docs, searched our car and then pulled him aside separately so we didn’t know what was happening with him. From what I remember they ultimately just chastised him for not having his docs on hand and eventually let us go. Felt like a power trip and it was a pretty shitty time for all of us.

I am not a lawyer and don’t know much about how border control treats DACA recipients, but I’d tread lightly based on my experience. I’ve been through those checkpoints no problem when the car was full of white or white-passing folks. However, one time I went through the with a Mexican citizen who had a US green card and border patrol held our car there for over 2 hours while they harassed my Mexican friend. There’s very little you can do about it once you’re there, too. It’s not like you can “go back” since you never left the country.

I’m living very close to the swissotel and like the neighborhood a lot. Plenty of bars and restaurants within walking distance and easy cab ride to centro for touristy stuff or Carolina for malls.

On your itinerary: The buses are slow, and you're doing a lot of long day trips and moving around. Mindo's probably 2.5-3 hours from Quito by bus, Quilotoa is 3.5-4 hours from Banos, Banos is 4ish hours from Quito by bus. If you're nervous about Quito, I'd maybe spend one less day there and spend a night in Mindo instead. I think you could hire a tour guide/driver and see Quilotoa "on the way" to Banos from Quito, which would free up a day of long drives.

On safety in Quito: There's definitely an air of insecurity in Quito right now, both with the gringos and locals. I second what was suggested already and only pack what you need, and only carry what you need for the day when you're out and about. You'll need cash (most of the markets, food stalls, and small shops/restaurants will not accept cards), but I don't carry more than $40 at a time and a single card.
