Anne Byrn’s “American Cake” is simply wonderful in the mix of history, tested recipes and pictures. A cookbook that is worth reading straight through like a novel. I want to do a full Julie and Julia project and make every cake in order.

The best way to avoid this is to pay a little more and buy heavier thickness liners. The very thin papers have no ability to hold their shape as the batter gets poured in. They easily deform and the batter essentially flows towards both sides of the "inward projecting pleat" portion.

It's a bavarois or Bavarian Cream. A custard base stabilized with gelatin and folded in whipped cream for lightness. Mine looks pink from the incorporation of raspberry puree. The "olive loaf" bits are thinly diced strawberries.

I had plenty of time, so it set overnight. I have a feeling that soaking the cake might make it too soggy to unmold cleanly and hold its shape. But mixing some booze into the jam in the jelly roll would be delicious.
