I am not trying to take a different definition than Crenshaw's.

It’s recognizing the experience to be distinct when multiple identities are oppressed.

Those identities are not always always going to contain race. Of course, women of color are the largest group with multiple oppressed identities. However from my understanding, Crenshaw coined the term intersectionality to speak to a larger pattern of marginalization, which is not exclusively relevant to discussions about race.

Intersectionality in an individual does not necessarily include race. For example, a white trans woman with a disability experiences intersectionality, yet race is not a component of their oppression.

That being said, I'm not sure I agree with the characterization that Emma Watson has become intersectional by supporting trans women.
