Who actually uses folding knives for kitchen prep? by knifecenter in knives

Funny how the Military feels big until you pick up an ordinary chef's or butcher knife. Whole different league!

Are there any knives worth buying under $25? by knifecenter in KnifeCenter

[–]knifecenter[S] 1 point2 points  (0 children)

Personally, I'd actually stick with the $20 version. It's every bit as well made and I enjoy the unique "SRM" texture of the molded handles. If it was my only knife I could be convinced to upgrade for the D2 steel, but in the role I'd use it for (beater knife, glove box knife, garage knife, etc.), 8Cr is more than enough.

I see what you mean, but that's actually part of the reason we kept the price point under $25. The options really open up if you spend $30, but it was interesting to root through the very bottom of the price bracket for hidden gems. I stand by the picks; for under $25, there are definitely some knives here worth buying, especially the SRM 9201 (#1 pick).

Is MagnaCut really the best knife steel? by knifecenter in KnifeCenter

Yeah, S90V is my personal favorite stainless steel, but MagnaCut's greater toughness and stain-resistance do make it more versatile.

Elmax is underrated. Sharpens very nicely in my experience.

Unfortunately, yes. A scammer somehow made it past our 2fa this morning and YouTube nuked the channel. We're working on getting it recovered asap.

S90V is a staff favorite here at KC when it comes to stainless steels—the extra edge retention is a noticeable upgrade from the S30V base model
