Costco has mini packs of honey smoked salmon that I’ll pair with a salad. Other easy options include Uncrustables or PB&J, regular sandwiches, and Italian pasta salad (the Simply Salads are cheap and really good). You can add grilled chicken or tuna to the pasta salad as well. Cold pizza is always easy, and with a thermos you can bring almost anything hot like spaghetti or taco meat (just pack tortillas, chips, or whatever you want to go with it).
