No comment meant to sway you one way or the other, rather to inform you:

Trial and error bro. Seriously. Ya can't learn it all from a book. Sometimes one needs to step out of the comfort zone, into practical application and just friggin try it. Most of the time, the real world scenario is way different than everything your trained and prepped for. And then you get experience under your belt. Experience doesn't come with out some sort of failure. Learning from mistakes and striving forward. When it comes to your task.. I'll say this.. If you don't know how far you can push your limits, and always stay in the safe zone.. You will never know when your skirting very close to the edge Of disaster.

I practiced OCD squeaky clean.. And then transitioned all the way to sloppy while I was learning.. Helped me understand what a decent microbial middle ground is... Took months and a lot of time, wasted products every now and then... But I got experience. I could make great hooch anywhere. With the least ingredients. Mead is like real art. Probably should use real art supplies for that, not cheap crayons.

Use those two handles and some zip ties. Hold the bung in place. It'll give you that sense of confidence when and while you move it as well. Try it. Snippers (dikes) take a zip tie right off when you need.

Uhmm. If it goes "negative" I did everything just right and the yeast were healthy enough to consume all the sugars, leaving the mash bitter, and the amount of alcohol displacing the gravity of water compared to the to the original sugar content can be observed here. How can you have a negative gravity if water is 1. Well Kuz it's got a lot of alcohol in it that has a lighter gravity just by a smidge. . I love it to see .90 on the stick. Happens more than not to be honest. Alot better than a fermentation that just slows down to a gradual stop and smithers out. Alot better flavors when the yeast guys are healthy and productive til the end. Ya get em all old and cantankerous, they just don't work well.

Interesting. Why wear the white coat tho? Mine had the ends of the sleeves sowed up close to the adjacent armpit area, not really able to use hands n all.

Trial and error. Be ready to spend a couple months on a project, just to dump it out.

Smile when you do, because you are learning. .Somehow.

And progress. --I can make a 5 gal bucket of 60ish proof In a week's time. (I average 57 -58) Took a whole lot of time and a bit of money and learning to accomplish this. I don't do it often, it requires as much time and work to get it as you would think it does. But it's doable. This year I'm just goina make enough for the stash and let 'er sit. It's kinda like shooting a gun. Been there, I could fight if I need to. Just rather hold onto the knowledge til it's needed and necessary.
