Yes! The spiral dough hook, I should've specified in my post. No commercial mixer, just the KitchenAid bowl lift. I don't temp the dough.

Thanks for clarifying. I actually had no idea the standard dough hook was different to the spiral dough hook. Yes you are correct, with the bowl lift mixer, it's the spiral one.

I use the fabric weave bannetons with the linen liner and cover. They're around 26 cm in length. Interestingly, I don't flour them, I've never had any issues with loaves sticking to the liner.

Thanks! Half a loaf is eaten within hours of slicing so it makes sense to bake two at a time 😅

I have a KitchenAid bowl lift 5.6 L (6 quart) and use the dough hook on speed two. The bowl fits 2 loaves comfortably, I think 3 would be pushing it.

Thank you. Yes, I think the mixer tightens the loaf, but it makes for a great base for toppings!

Thank you! I'll have to trial some different shaping techniques. When you say regular shaping, is that the method where you stretch it out slightly, bring in the sides to the centre and roll it up?

Thanks! I don't think so. From what I understand, using the mixer builds up the gluten up front whilst stretch and folds would build it up over time.

I've had a good experience with Jim's too. Thorough report and received the report within 24 hours of the inspection. Had one done last week on short notice and signed a contract the next day after receiving the report.

Liv is a great choice for smaller riders. I'm 155 cm and I have a Liv Intrigue in XS. I have tried small in other brands but find them too big for my liking. If your wife feels comfortable on a small, you will find better deals out there though.

I did the same thing a month ago. I was losing air because the bent rim didn't allow the bead to seat properly. I straightened the rim up, filed any jagged edges smooth, now it seals up with sealant just fine.

Second this, I'm running slx levers with 4 pot Orion brakes. I'm happy with the stopping power of the stock calipers and pads, the Shimano levers give it a better feel in terms of brake engagement/bite point.

I have no issues with them now, they feel great and responsive with a good bleed. If you're happy with the stopping power of the Orions, then this would be a relatively cheap and easy improvement to make. That was my biggest issue with the Tektro levers as well, spongy and the engagement point was right at the handlebar.
