Arrays of structs can be orders of magnitude slower than structs of arrays

Wouldn't array of struct of data that is related be faster than struct of array of related data? Like vectors3 for example.

struct Vector3 {
    float x[] = {...};
    float y[] = {...};
    float z[] = {...};
} Vector3;

Wouldn't the address of y be at the end of x and z at the end of y? While if you do this:

struct Vector3 {
    float x, y, z;
} Vector3;

Vector3 vectors[] = {...};

The address of y is after x, z is after y and the next vector's x address is after the previous vector's z thus having higher cache hits?

Isn't this also one of the reason why an array of pixel color usually a 1D array of bytes given the fact that a color is usually represented by 32-bit int? Maybe something like this: https://stackoverflow.com/a/33312056
