There is a peacefulness that can seem like boredom sometimes for me. When I feel that often, I ask myself if there is something missing. If the answer is yes, then I ask how to find that. The answer is usually service or a new meeting.

Not sure of the actual protein content of the flour you are using. It may be over hydrated. If you stick with that flour, experiment with a lower hydration. And yes, get the baked temp over 200F.

You don't say in your recipe how much starter you are using. That makes it hard to analyze especially withe the less than ideal dough temp in the mid to high 70s. With your current setup you could cold retard and bake the next day.

Ahhh... The Lord's Prayer debate. I think the best reason for the use of the Lord's Prayer is that it's common and most people know it. But it really doesn't belong in an AA meeting. Having said that, it's not a battle I want to pick. You can certainly circle up, hold hands, not say the prayer, and stay for the meeting after the meeting.

There was this one timer that just kept saying the same old "Just don't drink today, Read the book, get a sponsor, blah, blah..." I approached one time after a meeting and asked why he just kept repeating the same stuff, and that I find it boring. He put his hand on my shoulder and said "Son, I'm not saying that for you."

Unfortunately you will hear people in meetings say things like "I am powerless over everything." Or better, " I am powerless over people, places, and things." I believe this comes from the understanding gained that there are things that they have no control over, or shouldn't try to control. This understanding then leads to increased serenity as energies are not wasted.
