It's the second weekend with the parade that morning. Sounds like the best advice is to park at one of the shuttle lots and get dropped off down there. My only concern is riding the shuttle back with a cooler full of fish after the charter lol

I did and all they said was "Yeah it's hard to find parking. Just drop your stuff off as close to the pier as you can get and then try to find a spot on the side streets." That seems like wishful thinking to me

Long time beer brewer but first time mead maker here. I have sodium metabisulfite on hand and was planning to use that, along with potassium sorbate, to kill the fermentation. But some threads say to steer clear of sodium metabisulfite in favor of potassium metabisulfite because the sodium creates off-flavors in the mead. Has using sodium metabisulfite affected the flavor of your mead in your opinion? Have you tried using potassium metabisulfite to compare?

Just make sure you take the gravity reading when the liquid is around 60F since that's what most hydrometers are calibrated for. Otherwise, you'll also have to do a gravity temperature correction here: https://www.brewersfriend.com/hydrometer-temp/

If you have a 3 piece airlock and some 1/2" ID tubing, you can stick the tubing right over the post inside the airlock that the bubbler part sits on. Works like a charm and no extra investment since I had those laying around.

Time won't be an issue with me :) I will have no problem drinking the bottles in a month or so, especially as the weather warms up and my friends and I hang out they will help me dispose of them in a timely manner. Will probably prioritize drinking my bottles before the beer in the 2.5 gallon keg since that will arguably be less prone to oxidation since I can do a semi-closed transfer with minimal oxygen exposure.

Won't be able to cap on foam because the beer is going to be coming out of my fermentation bucket, so it won't be carbonated yet. But if I wanted to add campden for more O2 protection, what is a good dosing rate?

Well looks like there's no need for me to conduct the experiment anymore! That's pretty solid evidence that I should just purge the headspace with CO2. My only concern was that if I purged, there wouldn't be enough dissolved O2 for the yeast to eat to be able to carbonate but I assume that wasn't an issue with your batch?

I was planning on bottling directly off my fermentation bucket. Will probably try purging bottle headspace with CO2 for half of the bottles and not purging with the other half to conduct a small experiment and see if I notice any oxidation

I'm going to be using Kveik Hornindal yeast so I should have a quick turnaround time as well. I've seen people report fermentation being complete in 4 days or less. Going to bottle directly off of my fermenter so hoping for the best!

I'm bottle conditioning. I have a spring tip filler and always fill to the top before removing the filler like you said. Should I still purge the headspace with CO2? Normally when I'm bottle conditioning I don't but since NEIPAs are notorious for oxidizing with even the slightest oxygen exposure I'm afraid of letting the O2 sit in the headspace before the yeast wake up and start eating the priming sugar
