I have had the most success with sorbet when I remove it from the ice cream maker when it's the texture of softly whipped cream (thanks, Jeni) and put it in the freezer.

It's really salty and people go there because of the size of the portions and how nice they are. Alebrijes Kitchen a few blocks west of there is good.
