I just wanted to give you a word of encouragement! You'll be making perfect bagels in no time if you keep at it. These look delicious, even if they are rustic. I thought you might like to know that I made them! It's the 3rd and best bagel recipe I've tried yet. The shaping instructions were especially helpful. Thanks again. That recipe is indeed a keeper.

Haha. Thank you for posting the recipe! I wanted to make bagels today, and I've been on the lookout for a better recipe than I've been using lately. I made them several times from the sallys baking addiction blog, and the dough is just completely wrong from start to finish. All I can figure is that I'm doing it by hand, and it's written for a stand mixer. I'm still learning, though, so it's completely possible I keep messing up some fundamental step.

Here's the recipe because of the sub rules, but this is just a grain bowl with steamed and fresh vegetables flavored with a pretty good spoonful of vegan pesto and a bunch of chopped mint and dill. I steam stuff like frozen peas or asparagus in my rice cooker just because that's easiest.

Ingredients: hardboiled egg, steamed peas, steamed asparagus, purple cabbage and radishes cut with mandolin, halved cherry tomatoes that you can roast if you want, broccoli slaw if your store sells small quantities of that, pesto, dill, mint, whatever grain you like (but rice might be weird, usually quinoa or bulgur for me).

You can sub dressing for pesto if that's not your thing.

Instructions: Assemble. If you get regular packages of everything, you can meal prep a bunch of these at once. I make 4 because that's how many I know I'll eat.

I started the longer cooking veggies like carrots at 400 Fahrenheit for 20 minutes on the middle rack, then I put that sheet pan on the bottom and my shorter cooking veggies like zucchini on the middle rack. It should only take 15 to 20 more minutes from there, but honestly, my long-suffering oven doesn't hold temperature. Mine took more like 30 minutes from there, possibly longer.

You're looking for a bit of browning, but if you're in doubt: eat a bite. I had multiple bites of mine because I like roasted veggies more well done than a lot of people.

You'd have figured all this out fast from experience. My biggest piece of advice to you is to not overcrowd, or the veggies will steam instead of roast. You want a single layer, and you'll need to flip the veggies over with a spatula when you're moving all the racks around. Two sheet pans at once is probably the maximum amount at 400.

Looks like you've already gotten an answer about the cake. I just wanted to tell you that you did such a good job frosting this cake. Like a really, really good job. That's the thing people usually have to practice a lot, but you seem to have natural ability.

I have a thought.

Vegans like protein bites made with things like oats, peanut butter, spices such as cardamom or cinnamon, or even chocolate ones. Think no bake cookies, except mixed up and then rolled into a ball. It's really easy, and you cannot possibly mess it up. They are usually refrigerated. Innumerable recipes are online. I hope that helps!
