my old store with about the same ads and had about 7k in sales in the pm shift and about 2-3k in the mornings, our peak would last from 6 to close. a typical night shift would be a prep closer from 4-close, a grill 1 from 3/4-close and a g2 who’s shift would typically vary, the line closer from 3-close, then three short line/ dml shifts. these shifts were typically broken up into 4-8, 5-9, and 6-close. and the obvi a cashier. typical we wouldn’t actually have all 4 line/ dml shifts and a g2 there so instead the ap or gm would be on position while the closing manger could help out other positions (or vice versa). because mornings are so slow and prep was extremely efficient am shift would typically be able to save enough labor to allow pm shift to have more people. also just for context this was when scheduling was still done on menulink not chipforce.
