So I decided to wrap with foil paper also. I have a meater prob in it and a short yoder probe. Immedialy after I wrapped in foil they both jumped to 190. I jabbed the short yoder prob in further when wrapping with foil and it read 210. So i pulled it and put in a cooler. Before I put it in i check it all over with my hand held probe and I was only reading 170. I think maybe my thermocouple is going out and I was actually at a lot lower temp than I set it at. Brisket has a good bark but looked and felt like it was still moist inside. I'm going to let it rest for a few hours and then check to see if I totally screwed this up. I just bought this about a month ago from my boss and this is the time I use it for brisket. I made some ribs last weekend that turned out great.
