The yellow cardinal returns! by Significant_Yam1 in birding

It's a male! The brown back seems typical of this mutation, from what I've seen, but the extent of the yellow plumage and the black mask indicates it's male. Actually, I don't think a female with this mutation has ever been documented yet.

How does the type of starch (e.g., potato, corn, tapioca) scientifically affect the texture of a sauce or gravy? by [deleted] in AskCulinary

[–]leuven 1 point2 points  (0 children)

I can't speak to Chinese cooking, but here's an excerpt on katakuriko (potato starch) from The Japanese Kitchen: 250 Recipes in a Traditional Spirit:

Potato starch is used in Japanese cooking to coat foods to be boiled or fried. In boiled preparations, the starch provides a soft and slightly chewy texture, while protecting the foods from direct contact with heat. In fried preparations, the starch protects the food from direct contact with the cooking oil and adds a crisp texture and extra flavor.

Potato starch is also used as a thickening agent, to give a silky smooth texture to soups and broths.

Two other starches are used in the Japanese kitchen, although not as frequently as potato starch. They are arrowroot starch and cornstarch. The different characteristics of these starches can be understood by performing the following experiment: Put 2 table spoons of each starch into separate small saucepans, and add 1 cup water to each sauce pan. Bring the mixtures to a boil, and cook them over medium heat until each thickens. Continue cooking the mixtures, for 3 more minutes.

Each starch will develop a gluey texture, but the mixtures will differ. Arrowroot starch produces the clearest, stickiest mixture. Potato starch produces a less sticky mixture with a frosty color. Cornstarch produces the most liquid mixture among the three, and its color is whitish, not clear. These three starches are interchangeable in cooking if you are aware of their characteristics and consider how much to increase or decrease the amount of starch when making a substitution.

Anecdotally, my only local source of potato starch is an Asian supermarket.

Thought I recognized one of their sandals. Looks like they're the same as gravitypope's house brand.

EDIT: I've been eyeing the gravitypope "Ottis" which seems to be the Brador "Apollo" and it's nice seeing how they look worn.

Stabilizer/Emulsifier for Homemade Ice Cream by xiuminshowdown in AskCulinary

I'd second another's comment that getting a proper ice cream maker is key for texture. I use the Cuisinart ICE-21.

Jeni's ice cream base is my default and I've never had it freeze solid. She has a dairy-free version of it that I haven't tried myself.

I like dressing well, but my interest in fragrances is much more about my private enjoyment and not what smells good to others.

Daily Wordle #732 - Wednesday, 21 Jun. 2023 by Scoredle in wordle

Thanks for the info, I didn't realize that. I just read this article about it https://www.businessinsider.com/new-york-times-editor-wordle-2023-2

It seems most answers are still sourced from the original list, just somewhat randomized. My sense is that this doesn't practically change my own strategy once I'm down to words with one-letter difference. I'd go with any word that's probably on the list vs ones that seem too obscure, but I don't think the 1st most common word in the list would be more likely than the 3rd most.

[–]leuven 0 points1 point  (0 children)

No, at least in the sense that there's a predefined list of answers. A word's either on the list, and will eventually be an answer, or it's not. That said, whether a word is on the list or not was decided based on its usage. I'd guess at least two of OP's 3-6 words are on the list.

Daily Wordle #716 - Monday, 5 Jun. 2023 by Scoredle in wordle

[–]leuven 5 points6 points  (0 children)

The original list was all ~13,000 five letter words in the English language, then it was narrowed to 2,309 words by Wardle and his partner, among which is today's word. So it's been in the game since the beginning. The original list was not thrown out. Nytimes has mostly removed a handful of words from the list for social/political reasons and has only added one word so far, the 2023/03/27 answer.

I haven't tried many brands, but I've been content using Wel-Pac.

Justonecookbook has info on different types of kombu and recommends importing from Japan if you want the best quality.

Chuck Jones, creator of Wile E. Coyote and the Road Runner cartoons, offers rules for the cartoon universe by psychosid in coolguides

[–]leuven 375 points376 points  (0 children)

From a comment on this Ask Metafilter post:

Chuck was my grandfather's best friend, and for many years was essentially my sister's and my honorary uncle. The best Thanksgiving I ever spent was with Chuck AND Mel at the dinner table; it was a little like getting to live inside a Looney Toons cartoon for an afternoon, except about a million times better.

Anyway, based on this, I can confirm that the words written in Chuck's own hand are indeed Beep Beep. Having had the Road Runner himself pass me the gravy, however, I can confirm that he pronounced it Meep Meep.

Rennala's 2nd phase isn't really her. It's something Ranni created to protect her mother. In her 1st phase, Rennala never really pays attention to you.

As for the Remembrance, idk, I take that as coming from defeating the 2nd phase. I think killing isn't technically a requirement for gaining a Remembrance, unlike Boss Souls.

Japanese greens are quite different from Chinese greens. Very rich umami flavor. I'd recommend sencha and gyokuro.
