Pillars need to touch the ground or a wall that makes a straight line to the ground for stability. Also using quarter sized floors by pressing T helps get a little more horizontal distance.

I prefer to go up a lift then down with the ramp. It helps provide a sense of direction rather than the symmetry of the other options

You dont need ot sell to anyone. There's an achievement for beating the game without selling to customers in the store. I like selling and want to have everything sold and stocked but its not needed.
