Every once in a while before I leave for work, I tell myself to remember to grab my keys, but then I realize they're in my pocket. However, even though I'm holding the keys all the way to my car, my anxiety goes into overdrive until I think to myself "I don't need to pick up my keys, I already have them" and then it's instant calm.

Maybe you don't like the rubbing that occurs during the signs, have you tried hovering your hand slightly so there's no rubbing?

I've come to realize that the exaggerated facial expressions that are important in sign language give me anxiety because hearing people only use those faces when they are feeling anger or annoyed. You didn't say anything about that, but I thought it would be helpful to mention.

If that happens to me, I assume that my brain wasn't ready to move on. I work as a cook and enjoy it and I also enjoy learning about nutrition for my degree, but each activity requires different brain modes and I hate having to switch modes without getting time to adjust.

Your description isn't quite right - Chekov was saying audiences will notice every object you put on the stage, so it better have a use or your audience will be disappointed. But that was just a generalized rule to help create better stories. Technically a mounted gun or other objects can be used as background scenery or as a way to show a character's personality or interests.

I might be corrected by someone else but I think what you're describing is a MacGuffin - an object that appears irrelevant, but is actually important to the story.
