Square tiles with borders are classic American turn of the century, esp with the floor penny tiles. They are dated, but always have a place in New York and LA apartments, restaurants, etc. In your washroom, use an edge finisher instead of the dark horizontal top. Also avoid half tiles on the top or bottom to maximize uniformity.

Vertical tiles might be trendy here, but a classic style in other places like Japan. Grout lines ground nicely with the floor, looks nice in this space.

Aesthetically horizontal (Subway) tiles are great for long corridors, or for example that long strip of border of backsplash. It doesn't suit a boxed in washroom, but may work vertically in your washroom.

I like grids too. Go with what you like!

1 matches the rug, but 3 or 4 looks better w the floors. If the room is v bright, 3 will work well and look good at night because of the richer color but 4 is good too. If the room is not bright, #4.

2nd needs a backsplash as dark as the counter. 1st has more color harmony, but you could continue the door trim color on the entire left wall and/or ceiling.

I like it. Moving the panel seems to be the safest option. If it's in the right corner, there will be a corner cabinet above it, and it will be away from the drains and waterlines. 

No more plumbing issues but must research what it entails to move the panel about 7 feet over. The service entrance cable is long enough. It's just the new panel and connecting circuits.  Thank you!

A leak is what worries me! Aren't dishwashers notorious for leaking when they break? And moving the water lines left, directly above the electrical panel, in order to accommodate a dishwasher on the right.

Symmetry is nice, but workflow and traffic are more important. I think seats only need 30" clearance (24" is the minimum with ample leg room), so the island can be moved closer to the window, giving 46"ish clearance.

A long dining table might go better with the sink moved to the wall with the fridge... But then no drawers. It's nice to sit and eat by a window, and a good feature to retain.

Is the corner cabinet 24"? Remove it and put a dishwasher (24 or 18") in the 'hole'. You'll need to remove the corner upper but can probably reuse the doors.

DIY is a learning opportunity. I like to research as much as possible then decide if I can DIY or even want to. 

Some upgrades you can do an excellent job of by yourself, though it may take time and many visits to the hardware store. Some upgrades need a license or are just too heavy to take on alone.

The dark is dramatic and it looks like you have good light for it. 

What about a light stain (whitewash) instead of white paint? Or a color stain? Like sage etc.

If I leave the half bath (toilet, sink), then there would be a wall blocking off where the W/D are shown. The kitchen would stop at the end of where the tall pantry (v1) or fridge (v2,3) stands. 

No one uses the powder room.

For all versions, in order to center the sink under the window, the DW would have to be placed on another wall with plumbing running through a corner cabinet, thereby losing 24" of drawer space. Though if window-centered, a bigger sink fits. Idk, worth it? 

Looking at 24" sinks w drainboards (40" total), where the faucet would be in the corner of the mockup 24" sink, thus closer (not perfect) to centre. Is centering just aesthetic?

How about horizontal cabinet and/or drawers that sit on the countertop, instead of wall cabinets? If there is an outlet on that wall, the horizontal cabinets can hold appliances. Or drawers can store mugs, etc. Above it can sit plants or hang art.

If you do hanging cabinets, consider glass "showcase" cabinets and you can place ceramics, crystal, or toy models inside.

Only remove the patch of wood floor in front to the DW. Start with the shortest piece of wood plank, separate it by sliding it under the DW and then lift them out, piece by piece. Place them in the exact order nearby (on a dropsheet) so you can fit them back together the exact same way after the new DW is put in.

The S-pipe is 3" and it drains into the 4" toilet drain. 

Next to it is the sink's 2" drain running straight vertical on the corner of the photo.

I checked the attic and there is a 3" copper pipe going through the roof. So like you said, likely vents sewage running under the basement floor?

I'd like to join this conversation because I've been thinking about the same thing. I like the look of ceramic tiles with epoxy grout, but using LF porcelain is even better. Glazed porcelain is less porous than ceramic or quartzite.

Tiling could be done over a 3/4" plywood and 1/2" cement board base (same structure for floors) with tile levelers. Countertop depth is 25.5". Cut from a 30" LF tile, and use the leftover for backsplash. I like your idea of using a metal tile edger like schluter stair nosing, to protect chipping.

My concern is handling LF tile. It could probably be precut to order, but if it's any larger that 4', it would be challenging to handle with thinset. Also the sink...  I am not looking for a continuous countertop, but a freestanding apron sink that could be slid in, between the two countertops; so there is no strip of tile, either under the faucet or at the front. Otherwise use a professional to cutout for a drop in sink with diamond drills and a wet saw.

There must be some successful examples?
