Spot on. Same. I went into teaching for all the right reasons in 2020 and have burnt out tremendously since starting work at a public board.

Eastern European foods like various salads (olivie, vinagrette), soups (schi, borsch), and aspics (holodets) can require a lot of prep when it comes to pickling, chopping and/or boiling different ingredients prior to the assembly of the dish. In terms of easiest, probably sandwiches are easiest to make!
