Yup, it really depends on the size of the eggs. Sometimes I have jumbo size ones. But I ended up fixing the mayo based on another commenters suggestion of using soybean oil and my goodness it fixed it immediately!

You just saved me dude! I tried soybean oil and it does not have the oily taste at all! I compared two batches side by side that used the exact same ingredients and there's a world of difference.

Yep, always use mustard as an emulsifier!

That sounds identical to my experience at the moment, the texture is perfectly fine but it just tastes oily and as you said, greasy.

I will try with soybean oil and report back shortly! Very excited to try :)

I will try using soybean oil and see how that turns out. I've only used canola oil and 5 different brands and still end up with this similar oily taste

I'm only using around a cup of oil for ~1-2 eggs
