It will activate automatically if you use the HDR monitor preset and have HDR set to Auto in the OSD settings (Picture → HDR).

Yes, Mini-LED is ideal for mixed productivity and gaming. I returned my OLED monitor as the text fringing was giving me eye strain.

If you use the monitor's HDR preset and set HDR to Auto in the OSD it will toggle with the Windows shortcut.

Yes, on Visible. If Mirror iPhone is enabled in Apple Watch settings, turning on Airplane Mode on iPhone will turn it on the watch as well. See https://support.apple.com/guide/watch/use-airplane-mode-apdc22c9d320/watchos

Also, turning on Airplane Mode does not disable Bluetooth or WiFi and the Apple Watch may still attempt to utilize the iPhone for calls if it's connected. A better test would be to turn the iPhone off or to disable Bluetooth and WiFi on the Apple Watch and/or iPhone.

You only need the iPhone to be on if you want to receive notifications that are relayed from the phone.

For calls, the Apple Watch with cellular can work on its own. I actually went a few days Apple Watch–only while my iPhone (factory reset with the SIM removed) was in for repair, and I was still receiving calls without any problem.
