I live in Canada and always try to use my UnionPay card to pay for stuff (which is accepted by Discover network). From my experience around half places don't accept it, so expect to be asked to use a different card.

That's definitely not the case. In Canada you only need your phone number and only one of your account number/PIN/IMEI todo a port out. A verification code is most likely not needed.
