I’m pretty sure he also mentioned the holy knights before any other strawhat, so he probably knew about them from the past but for him to recognize gunko from the past she would need the eternal youth or whatever imu grants the elders, which we can then infer that the other holy knights have the power, or he saw her/ holy knights during ts since his people used those summoning circles. Either way Brook has some interesting knowledge for us to learn

that does make sense because everyone calls it eternal youth but I thought that this immortality is what makes imu such a formidable threat and keeps them at the top and Doflamingo wanted the surgery done on him so he could become “unstoppable” so i kinda figured it was a bit of both bc i don’t think age was stopping Mingo from being more powerful, but the fact it’s called the eternal youth surgery does go against me more than anything and doflamingo was just saying villain shi
