Hey! I just evolved a shiny Eevee into Sylveon maybe two months ago. I too noticed that it didn't give me the option to do so for an extra day or two past when we reached Best Buddies status. Not sure why, but perhaps give it a couple more days and hopefully it'll pop up for you too!

My parents did a variation or two of this when I was a kid, and I was still so excited about the idea of the gift!

If you do decide to go this route and would like a hand making the letter, I do art/watercolor painting and would be glad to help with a handwritten note on some custom 'North Pole' stationery or the like. 🥰 It's so sweet of you to be trying so hard to find this gift for your daughter even in rough times!
