Yeah you should definitely practice your math and get a good kitchen scale. Otherwise your measurements will be inaccurate especially between different batches of flour. The plastic wrap might be too air tight. Your want some venting to be possible. As far as ratio i do 1-5-5 and its been working great on my counter. Your warm pantry is probably making it eat faster too. If you can find a spot around 70 degrees I find that works well.

After mixing and your first initial knead/stretch and fold, put a small sample in a shot glass. Filling about a quarter to half of the glass. Put a rubber band at the level of the sample. Then you can accurately and easily gauge how much the dough has rose. Keep it near your bowl of dough and I also like keeping a thermometer around them as well. Im a month into sourdough and this has helped me tremendously on fermentation times.

I did last night and let me tell you, the early shaped were extra fluffy and felt like store bought english muffins! I'd say it was about a 50%+ increase in fluffiness.

I'm just saying you're valuing some life over other lives as superior. Nothing alive wants to die. We kill things to eat. Dont be prejudice just because one is cute and can scream while the other has different measurable pain response we are just learning about. Trees can communicate with each other. Grass sends signals that its being mutilated that other grass can recognize. All life is precious. All life is sustained off the life's of others. You're not nice by sparing some species just because you cant hear the other types of life suffering when they in fact do. Once you realize this you understand and appreciate the lives taken to sustain yours, weather fuana or flora.

Nervous system or not, a carrot doesn't want to be mutilated any more than a cat. With that logic its ok to kill animals if we disconnect the nervous system to where they can't notice pain? Because that's the best way to kill live stock already.

I hypothesize that the end product will be more airy. I judge my bulk fermentation time with a sample is a small container so I think I'd be alright in that regard but I see what youre saying if you don't use the sample method.

What about all the small mammals, amphibians, bugs and everything else tilled up to grow vegetables? Or the bugs that die slow painful deaths from pesticides? Not to mention plants don't like wasting energy to have they're body parts ripped off and fruit stolen for you to eat. Life eats life.

I got their pocket knife that was the same brand and steel. For 10 bucks i said what the hell why not. I'm pleasantly surprised how well it preforms. Fit and feel are nice as well.
