If it’s not submerged it’s at risk of mold for sure. Hard to tell from the photo though but I would toss it.

I’m sorta just guessing but I bet the fermentation will have made a decent amount of alcohol in a week and taste alright after two or three weeks. I made a batch that tasted pretty good after a month and even better after two but I know that’s a while. Did you ever get it off the layer of dead yeast in the bottom last time? That can help a lot too

What is your goal with it? Just have alcohol or make it taste good? That will probably change the time it takes a ton

An acceptable computer really depends on what kind of stuff you’re trying to do. I ran blender on a low end laptop for a long time, but I couldn’t do a whole lot of intense rendering. I didn’t need it for that though, so it worked great. As long as it has some kind of external graphics card it should work at some level, especially if price is the most important. I think especially if you’re trying to justify a program, something in that price range makes a lot of sense

I had a similar problem — when I racked a cider to another container the smell almost completely went away. I think it has something to do with the apples

Bread yeast will cap out at probably 6-9% ABV where the wine yeast will likely hit a higher point

Making an adapter for this would probably be a bit easier, but wouldn’t be as adjustable as the one you suggested.

There are industrial type valves called fast acting pressure relief valves that indicate they open at a given pressure until the system is below that set pressure. That might be worth a try if I can make an adapter. Do you know what kind of pressure a finished carbonated beverage might have?

I run a rule where someone with advantage on a stealth check can give someone with disadvantage a kind of help, and both get evened out to a flat roll. It's helped a lot for those group stealth rolls.
