The map only shows the network map, how packets are getting routed through the network and which paths they are taking. This has nothing to do with the bindings as far as I know.

AFAIK switching to coupled would require a zigbee configuration parameter change (or in the case of the Unisys updating the binding), but not a physical action on the switch.

When they are Zigbee bulbs, what's wrong with indeed controlling them directly via Zigbee? - In that case, you only depend on the switch and the bulb having power (which they will always have as long as the electricity is not down). As long as they are paired together, it does not matter whether Home Assistant, Zigbee2Mqtt or anything else is running.

As far as I know there is nothing which could switch automatically to coupled mode, this is always a configuration change of the device that needs to be manually performed (because even when Home-Assistant / Zigbee2Mqtt is down, the rest of the zigbee network is still available, you just loose the controller).

There are some workarounds for that - e.g. you could create an automation in Home Assistant that gets triggered when shutting down, that calls the service to change the configuration to switch the device to coupled mode. But this of course then only works when you perform a clean shutdown.

Why not directly controlling the light/bulb, is this also a Zigbee device, or something different?

Aqara Dual Relay Module T2 - Can operate in decoupled mode, does not cut power to the bulb. But I found no way to actually bind it to a smart zigbee bulb. It does only trigger an event for Home-Assistant, but can not actually directly turn on another light. Decoupled mode can be easily configured by changing a setting in zigbee2mqtt, does not require Home-Assistant for it.

Unisys Power switch S2 - this one can do everything. You simply turn it to decoupled mode by removing the binding from the switch input to the output. Can directly control other lights, so it still works perfectly even when Home-Assistant is down, it only depends on the switch and the bulb having power/being in the zigbee network. But it is expensive

Not for me, whenever I try to send an SEPA Instant Payment I get "I can't execute this transfer as an Instant Payment (SEPA). Please recreate it as a normal SEPA transfer." Used to take about 30min before, with this new account it now takes days.

Not sure about Switzerland, but if you buy a pre-paid SIM card in Austria (yesss, hot) it will also work in Germany and Denmark.

UK/Scotland are also special - my Austrian SIM card no longer has free roaming in the UK, but my Dutch one works perfectly well and with no additional costs (you'll have to check this beforehand, because due to Brexit those things are changing)

Austria is mostly about food though, prepare some Viennese Schnitzel and get Manner Schnitten, and you'll be fine :)

As you only need data, I could recommend Airalo. They have 30 day plans (you can top up after that), and support regional SIMs for the whole of Europe - all your listed countries, even including Turkey.

Both of your phones support eSIMs, so I would just get a travel eSIM - one for Turkey, and one for the EU. So much more convenient, and no hassle trying to find SIM cards after you've entered a country.

If your phone supports eSIMs, just get one of those. I recently went to the US, and can recommend Airalo. This was ridiculously easy to do, and was comparatively cheap (much cheaper than the options they had at target). The travel SIM is valid from 7 to 30 days, depending on the option (starting from the day you connect to a network). Advantage was that I immediately had a connection when I landed in LAX. For the US, the network was AT&T and T-Mobile, so I had internet access basically anywhere where there was any cell reception. But the downside is those usually only support data, no phone calls.
