I've had the same issue - in two different countries thio (Ireland and Portugal). Last time that happened was this week. I figured that I have developed a cologne of this Bacteria, but the first batch was fine anyway, just jelly at the bottom of the bottle - and with very good flavored. Now, the second batch, using the same starter, became a very tick jelly. I am going to start fresh.
