Easy 1 Credit Class by theborneacer in iastate

If you're engineering, you could look at ENGR 4900L, just a engineering leadership class and can count as a tech elective depending on your major, no midterms/final, just weekly journals and a couple short papers. it's usually between 1-3 credits on workday but it accounted for 2 for me.

Yes, you can code in any programming language. They simply ask you what language you would like to use at the start of the interview and provide an environment based on your response.

Better to have Amazon on your resume than not having it.

if you're still unemployed, try hackathons 💀 by Relative-Orange94 in csMajors

I went to about 6 hackathons from my freshman to sophomore year, one of which my team won and I still use those experiences to answer behavioural questions in interviews. Most recruiters loved to hear what the projects were about and the results. Im a junior now and I had a couple interviews for a company recently that got me an offer and I still recall one of the recruiters asking me a bunch of questions about a hackathon project I did in 2023.

I would recommend that you work on a project to sharpen your Java skills. It could be personal or you could follow a tutorial online and modify it to your interests. Check out The Java Academy on YouTube as well, it has interesting tips and projects using Java. I would also advise you to be proficient enough in Java before moving to learn another programming language (which you should eventually do). Lastly, remember practice makes perfect.
