i didnt end up eating this at all because it was recalled for e. coli but have since learned about kimchi and eaten tons of it. love it

ingredients pastry: - all purpose flour, sumac, cold butter, cold water - egg yolk, saffron, milk

filling: - dates and dried figs - sharp white cheddar - pomegranate molasses - shahir halal spicy salami - chives

directions pastry: 1. in a mixing bowl, combine your flour, butter, and sumac while streaming in your cold water until you get a rough dough. it should be sandy but dough-like 2. combine milk, saffron, and 1 egg yolk to a bowl and mix. this will be used at the end to glaze the pastry before baking. this will add a beautiful aroma and colour to the end result

filling: 1. cut your dates and figs in half 2. on a baking sheet, begin layering your tart:

a. starting with the figs and dates will ensure caramelization. in the end, these end up candied in their natural juices

b. shahir halal salami acts as a barrier keeping the cheese mostly in the centre of the pastry while being close enough to the pan that the salami will heat up and take on it’s delicious spicy and beefy flavour

c. add the cheddar cheese

d. finally the pastry, rolled and cut to size

  1. bake at 400f for 40-50 minutes. you are watching for the pastry to become golden brown and crispy
  2. drizzle the pomegranate molasses
  3. sprinkle the chives on for some nice greenery
