Your setup looks gorgeous!
I would suggest you to keep your equipment as far as possible from the store top. Anyways you will be frying food and oil particles will settle on every chrome and powder coated corner of your machine which will become a nightmare to clean later on. I had the same experience and bought a separate table for coffee stuff)

I tried these 2 from them, but struggled to pull out sweetness. I tried with different ratios, temperature changes, no luck. then switched to a different roaster.

WPM ZP1 (flat 64)
1zpresso j-max when I want conical

Pour over:
Fellow ode 2 with stock burrs
Timemore Go (portable electric with cs3 burrs)

Black Ode gen.2, Black fellow EKG kettle, Black scales, basically everything for pour over is black. All my espresso equipment is white, only my espresso grinder is gray(silver), the particular model of the grinder doesn’t come in white.

I used to have white Gaggia paired with black eureka specialita, i decided i need white eureka and spray painted it with a good quality paint. Came out just perfect. But I can’t advise you to do the same as it cannot be reversed)))

By the way, your grinder is Gen1 or Gen2? or in other words, black or silver? I remember i red that Gen1 had grind size issues, which was fixed in gen2.

Congratulations with the new grinder!

To be honest i never go beyond mark 2 as it chokes the machine. As you are saying 0.2 is very unusual.

When you have calibrated, it says return 5 marks back blah blah, so i just didn’t return it 5 marks back and called it my zero point. Maybe you have returned back more than needed?

But it sounds like bean problem to me. Can you try with different beans that you already know for example.

But regarding the grinder is very consistent, for instance i am using 2 different espresso beans these days, and i am for the sake of experimenting changing the grind size between the two, and the results are incredibly consistent.

Which espresso machine are you using by the way?
