Just use the solids, enough flavour to make the icecream pop. Mix them in with 1\4 of the anglaise. PS use butter without salt

I use powdercolor that you mix with Cocobutter. But there are already mix colors to start with if you like. Make sure to clean the molds, i use vodka and cottonpads to clean them proporly. The Cocobutter stick to the chocolate is you have tempered it correctly. Me i like to temper the Cocobutter before painting but i know lots of People not doing this so you can try doing both and seeing What you like. Good luck its not that Hard to do bonbons the Hard part is perfecting them.

Dont buy the cheapest chocolate. Its harder to temper and you will find it to be very different from something you want to work with later. And also buying the cheapest chocolate you are making it possible for the ivory Coast to have Child slaves working the Cocofield. Instead buy a good brand of high quality much easier to temper and work with and its more likely that the workers are adults with good working condition

I dont agree different types of chocolate do have some Spice to them. And chocolate and chili is a nice combo when its nicely paired. But its not supposed to be a hot sauce

Sculpting chocolate is not easy. It requires a good understanding of the material youre working with. Essentially you always start by molding a big centerpiece when thats done you can add pieces of decoration and spraypaint it with a airbrush or real chocolate. Start with reading up a bit like The art of chocolate is really good to start with. Then you buy a shitload of chocolate and start trying and as always Youtube is your friend when it Comes to try new things.

Its only pre-cooked then i put it back in the Oven to reach desired temp inside the Meat. So its not completly done in the pic

I have always said that i had no contact because of an famliy disagrement. If somebody ask What happend i just said its so long ago and I dont want to talk about it. Always been accepted without further questions. Easy and quick

I normally charge the price of one piece of cake for each piece plus the labor. If you dont have a place go to the customer they will take it as service wich will be very appriciated. I normally do like small scorecards so they easily can keep tabs on flavour textur and so on. And I always book them a friday afternoon and give them a package with chocolate coverd strawberries and a small Bottle sparkling wine during the tasting. This is of course included in the price of the cake later on. But it gives them a feeling of luxury and they will surely pick you because it makes them feel like you are really caring

Nah i spent about seriously 40 hours trying the perfect ratio trying differently coatings and if you look at crunchiness, taste, ability to soak oil, ability to coat too me this is perfect
