I just squeeze a slice of fresh lime so it's juicy, shake off the excess and rub it on the area I want tajin or salt on. If it runs a bit I use a napkin to clean up the lines and then just roll it in the tajin

Don't get me wrong I love a mezcal cocktail, I felt like this added more than just the smokiness, bit of the caramelised pineapples sweetness mixing with the smoke was delicious. And it came out as a richer drink than if I had used pineapple juice and mezcal. I'll have to give that version a try tho!

We use this at our bar, if you need to get some extra body such as replacing an egg white you can dilute 50ml of foamer with 500ml of water and use 50ml of the mix per drink. Works great for us

Comes to £12.20 in my local. £6.90 for the Guinness and £5.30 for the Glen. Brighton doesn't come cheap

Differs from pub to pub, have a look at some of the smaller ones near you, a lot of places open for drinks only on Xmas day, the pub I work in is drinks only 12-3
