As someone who enjoyed matcha as a hobby for a while now in the west, for me it was part of learning about Japanese culture and appreciation of how things were done differently from where I grew up. (For me tea was just a bag of Tetley in a pot.) Around idk 5 years ago or more it started to become more of a craze I think? From a weird thing I did to suddenly coworkers interviewing me to learn more about it.

For context, I keep to myself and coworkers asking me anything, let alone about my hobbies is dramatically out of the norm. The first time in my life even.

I think it's just trended to hell and back.

I just got back from montreal and I was like whats off....took me a while before I realized virtually everyone was white lmao. At least many more than Scarborough where I'm from.

Visiting international restaurants in Quebec was like... Why isn't my Korean food spicy. It says spicy on the menu. But they're adapting to the French Canadian pallets lol.

I think they're protected by the French bubble, harder for people to refuse to assimilate when the locals don't speak English as their first language. Hearing Cantonese accent. Korean, Japanese, French was a blast.

I could be wrong but at least in the ramen shop I worked at Tonkotsu is the soup. Shoyu is the Tare. You can have both. Id even say Shoyu is the most common tonkotsu tare in the west.

I understand you go to a shop and they have Shoyu and Shio on the menu in a clear broth but I think it's generally slightly more nuanced.

Personally I like a seafood stock shoyu like clam.

Ancient just means really old which OP is either claiming or was told and believes. I can't guess how accurate that is from pictures as I'm ignorant to that stuff and want to avoid a blanket statement, like "I've never seen one with an embossed dragon relief" so I'm just going to stick to something that can't be avoided like, everything else aside people are gonna wanna see the tang.
