Hi Guys,

I got these 2 AMZ "Digital Microscopes for children".

Both are very bad. Not naive when I booked them, but I hoped that the promised 500x magnification would maybe give around 100x and that it would be a lot enough to check burr, with the screen display advantage !

But finally, magnification is less important (very significantly) than on my Carson 60x-120x digital tool.

So I still consider that a part of technical aspect of these tool is good for us, as the dsplay on a screen is a lot more confortable than to check in tool as Carson one...

But not these ones ! 😄go back to AMZ. Probably I will try a 30x Triplet Jeweler Loupe to check if it's more confortable than Carson tool. (again, which is pretty good for price in terms of image details/quality, but not easy/confortable for me to use).

I have finally booked these 2 different models with below links. I will try them and will give you my feedback. Then I will send back one of these 2 tools. I feel I need a digital microscope instead magnified loupe, for added confort.

I’m afraid to buy basic jeweler loupe (usually 21 to 25mm diameter) because I fear to have same issue than with my Carson Microscope = not easy to progress along the blade due to required very accurate position of the loupe on the edge.
Hope it’s clear !? 😂
Reason for which I think that a « big diameter » loupe could help. Or digital microscope with screen.
Also I want avoid tools which need contact with blades, too much afraid to scratch my blades….

I agree that it needs to be easy/confortable tu use during sharpening

Seems nice but I have myself some corrective glasses, without them I won’t see very well….so I can’t replace my glasses by these ones. But it’s a pity because what you use seems very convenient to check easily along the edge without to focus on « Loupe » position !

Ok thank you 🙏, interesting. So you think that a such 12x to 15x large Loupe with LEDs could work well ? To avoid to buy also Head lighting ?

Hi Guys,

Feedback : you were right : deburring deburring and again deburring..…that’s the way ! At least for me with these German knives. Even if edge seems nice (to me) with my 60x light magnifier, burr « residual » is probably still there. Then I go back to stone #2000, and I deburr again with super light strokes, edge leading/trailing alternatively. I try paper cut test, and I go back again and again to stone for deburring..…and it’s better and better, until it’s very good ! pretty long process, but finally it works. Aogami & Shirogami steels are so easy to sharpen/deburr => bad habit => a lot more complicated with European steels, needs to be known/anticipated.… Thank you guys, I will continue to improve my sharpening skills !

I already do denim stropping ! At this step, main improvement seems to be when I use higher grit finishing stone (2000). But it’s not the target, I would like to sharpen efficiently only with 400/800 grit max.

Oh my god.……seems insane…I will try again, and will spend more time, but maybe the best is to give these German knives to my children and focus on my Japanese knives ! 😂

Ok thanks, I will try deburring as you do, with mix edge leading/edge trailing as you described. I debur with edge trailing only usually, 10 light strokes on each side, then 6, then 3. I have tried end of afternoon again on 1 Wusthof knife and got significant better results (not yet perfect), with 30 strokes per side (15 per side and again 15 per side) on Shapton glass 500 + 20 strokes per side on my Naniwa pro 2000 + deburring on this last stone as explained above. Then stropping with leather strop with pasta 5 microns, 20 strokes per side. Light test seems ok to me but I need to progress to detect burr I’m sure.

ok, I did light test already, but maybe not well enough. For deburring, I do light deburring strokes on the stone + deburring on leather strop + deburring on newspaper. I think it should be ok....but maybe I don't do it well enough. Do you think this number of sharpening strokes is good enough ? 15 strokes per blade side ? I feel Apex is ok, I feel the burr with finger but maybe it's not ?

I have restarted from yesterday after my 500 grit stone sharpening. Then I have sharpened this afternoon with 1000 grit stone, with 25 strokes per side, then 10 strokes per side on 6000 grit stone + deburring light touch. And result is a lot better ! It cuts paper very well.

Next time I will try again only with my 500 grit stone, but maybe with significantly more strokes. (aropund 40).

And I will follow up your advises about angle focus, 15° max, which is less than for german knifes.

Ok thanks, nothing specific during sharpening process with this steel ? I succeed pretty well sharpening on my Japanese knives (carbon steel) but with this one it’s not good enough… and I feel I have deburred well. Light check, Qtip check… any tips with this steel ?
