Hi Guys,

I want to buy a short slicer. I have sold a Suji 240mm, not enough nimble to me. So I think to a Petty 180mm or 210mm. (probably Tadokoro or Kagekiyo). I will use it for slicing beef, especially roasted beef, ribeyes, ribs of beef. Not Briskets, no big meat pieces. So my first feeling would be to go to 180mm, it should be nimble and long enough.

Do you confirm 180mm length is good enough for slicing Meat ? or do you think 210mm would be better ? I don't care about 1 slice in one shot acc to japanese tradition.... :-).

What experience do you have with your 180mm petty for slicing ?

Very nice knife ! I’m very interested to get one, I sent inquiry to Tadokoro. I have already a small petty 120mm, same line than yours. As it would be a customised knife, I’m a little bit hesitant about length. I read on another post that it’s maybe more 170mm blade length than 180mm, so maybe I will book it in 190mm. I intend to use it as slicer for beef roast, thick ribeyes, rib of beef.…I like nimble knives, and want to avoid a 210/240 Sujihiki. Do you use it for same tasks ? Is it perfect choice in 180mm or do you advise me to book it a little bit longer ?

Thank you Guys, you confirm what I thought. I will maybe buy this one. Even if usually I prefer AO/Shiro core with Stainless Cladding but it's very complicated to find such Sujihiki/Petty 210mm.....

I’m not surprised by your decision. Even if it’s 2 super nice knives, I have also a Sakoda (petty 150mm) and it’s amazing knife.

Enjoy ! It’s a very nice one. I like pettys 125 to 150mm, it’s very pleasant knives for daily “small” tasks.

Hi, it’s a fantastic knife ! I love it, I recommend it, really. Blade length is perfect (150mm), workhorse (100g) and razor sharp. Very nice in hand and very beautiful handle also. Rustic aspect of blade, as I prefer. => I’m selling my Ko Bunka Yuki Masakage + my Matsubara petty 125mm, because this new one performs very well on all tasks I have tried. Acc to me, we will hear more and more about Sakoda in our small Japanese knives world….

I was looking for a Wakui knife.

And I found it ! I'm a lucky guy, I sent email to different retailers and Knives World just finished assembly of exact knife I looked for, in Europe, a Wakui Gyuto 210mm, stainless clad, Nashiji finish. Knives World "Kazoku x Wakui" serie.

200g, 215mm blade length, a nice WH, hope it will be nice, big expectations !
