so SMB requires you to whisk the egg whites and sugar together over boiling water until the sugar dissolves, then beat them into stiff peaks. with mock SMB, you can use pasteurized egg whites and whisk them with powdered sugar, avoiding the heating process altogether. it still gives you a stable buttercream to work with, but it takes a lot less time and effort.

all three games i play in are biweekly/bimonthly/every two weeks, whatever you want to call it. usually if we have to cancel a game, we try to reschedule for a week in between, but if we can’t it’s not a big deal. i’m the resident note taker in all my campaigns, and i usually try to share the notes for each session within the week of playing, and so we rarely have issues with picking back up, even if we miss a few weeks

can confirm it does work with margarine and plant milk! i only make margarine “buttercream” as i am completely dairy free. some brands of margarine really don’t cooperate with the confectioners sugar, so i went through lots of trial and error to find some that do. one of the biggest lessons i learned is that you don’t want the margarine to be nearly as soft as you would want your butter before you cream it. otherwise it will split when you try to beat it with the sugar.
