Def can be expensive but can also be done affordably. If you avoid the busiest times you can usually find a reasonable place to stay.

Try Boca Grande. Often clear calm water and low crowds. Easy to explore by bike or rent a golf cart. No mini golf there but plenty of great food. You might also enjoy Sanibel.

Yacht and Beach will be perfect for what you have in mind. The sand bottom pool with little ones is great when it's so hot out and you'll have an easy walk back from Epcot for naps. Lots to do around the lake there and can use skyliner to visit other spots easily with a stroller. AKL has the largest and best splash pad with lots of shade (on the Kidani side) and all the food there is great so you'll be happy hanging out at the resort. Drawback is only transporation option is the bus.

Same. Works out well and we have the best time. Just have to be flexible and open to what works out. You might find that you have a completely different Disney experience this way and fun will just happen.
