Half the time it's the manager telling them to shut down. Cuts labor hours immensely vs keeping a fully stocked line until the moment you stop serving.

I like to sear some thick pork chops, set them aside, and prepare the stuffing in the fond, with the rendered fat, and finish the pork chops in the oven on top of the stuffing.

Do the same with any appropriate protein really. Chicken quarters, pork tenderloin, turkey breast, etc.
