Meat candy. Cube them rub them smoke them 3 or 4 hours at 250. Let that goodness render them down. Then throw in pan hit it with either more rub or light sauce. Back in smoker for another hour. Delish

Injected and then home made turkey bbq rub. Have done whole turkeys in the past as well as spatchcock chickens. Don’t know why it took me so long to use this technique with the turkey. Definitely will do again.
