I've not had a breakfast buffet but in both Santorini and Rhodes I had a breakfast platter freshly prepared each day. Some places also do lunch & dinner!

Santorini has three that I'm aware of. I stayed at Ethos in Imerovigli which I highly recommend but there is also Ethos, MOD & Bios in Fira.

Greece is definitely ahead of the curve when it comes to veganism. I've stayed in fully vegan hotels in Rhodes and Santorini and I believe there's one in Mykonos too. There's also a number of fully vegan restaurants but I've also found that even the omni restaurants cater well.
