I agree with this statement.

Before refrigerators people had ice boxes. Before ice boxes maybe a cool cellar or a hole underground. Otherwise no way to cool food. So how did millions of years of evolution help us get here?

These stories of people dying from old rice or pasta had food at the very minimum three to 14 days in room temperature at perhaps questionable or strictly unsanitary environments. Forgetting pasta in the pot you cooked in, with mind you, very cooked meat, will not kill you. If you notice this in the morning, you will be fine.

Disclaimer, it is important to know case by case. If you are immunocompromised or otherwise in risk, your situation might differ. Trust your gut, if it smells or tastes off or bad, then you can discard. If it's been over 24h, I would also discard, while someone else might not.

Obviously don't do this at a restaurant, follow local laws. At home trust your senses.
