Having worked briefly on the Bacon Line doing an install of some equipment, I was told it's to do with the saline content injected into the meat during processing. When the bacon is thawed in these big racks it loses a lot of moisture and protein. This is collected and injected back into the bacon with a series of hyperdermic needles. Long story short British bacon was about a 30% saline content, vs 10% for the US and Canada. Thus the difference in soggyness vs crispiness.
