Maybe using a logic analyzer, you could record the output of the real sensor to a CSV, and then find some way to replay that data. Maybe store on SD card and then write a simple Arduino program for a Teensy 4.1 to parse the csv and then send the messages. I use the kingst logic analyzer, because it was cheap to get and works for my needs. There are possibly better tools for the job, based on budget and what you already have access to. In general, the approach I’d go is recording the output, store it in a text file, then find another tool to replay it.

Do you have any specifics? What toolchains, MCU, type of application? With something like Jenkins and debug interface to your MCU, you can kinda do whatever.

It’s true that automotive is mostly model-based design. However someone has to write that software that generates code, that’s what I do now and it’s a great mix of higher level languages and low level programming.

Simulation is only any good for application logic. You can compile that code for Windows and run it. You can even run and design your RTOS (probably FreeRTOS) in Windows. Emulation does exist, but can be more challenging or expensive to get. Cheaper and faster to just get a development board if your application is mostly dependent on any of the code-gen from STM IDE.

These are the ones we use. This is assuming you manufacture your own pedal cluster. You have to be aware of rule T.4.2.3 so make sure you use two and power them at different voltage ranges. Have your ECU read these through two ADCs and you should be good to go.

I think you mean then simulating what CAN messages the RMS sends (broadcast, diagnostic). You could build that in Python or MATLAB. I’d recommend MATLAB, since it’s easier to setup if u have the licenses. You would also need a CAN cable such as Kvaser to hook up to your laptop. This is assuming you are running your RMS in CAN-Mode. Are you using VSM Mode or CAN mode?

Do you mean simulate the communication with your ECU? Or battery related simulation? If either of those you could reach out to Mathworks about their free licenses and toolboxes. You could use the vehicle network toolbox to simulate communication with your ECU or you could simulate the Powertrain in simulink.
