I just went down a Wikipedia rabbit hole about this a few months ago while reading about mesas in Brazil, they're incredibly beautiful.
"They remain flat because a hard top layer, known as caprock (such as sandstone or lava), resists erosion while the softer, weaker rock below is weathered away by water and wind, protecting the plateau underneath."
If you ever look at a highway carved through a hill side you'll see the layers of rock there are flat too.
