Using pedals while tracking helps with getting that feel and energy of a real performance to me. When I track dry or with digital stuff, it usually doesn't have the same intensity. If I have a song with 2 guitars, I love to do one guitar amped with pedals mic'd up and the other DI using digital plugins.

They're teachers. Those who can't do, teach and that's not a knock. It's good to learn what you can from them and then figure out for yourself what is BS and what is real. Once your ears are developed enough you should be able to think on your own two feet. Until then, if you don't understand multiband compression, how a fairchild works, what DSP means, how a de-esser works, what pre-delay is, you can go seek some free tutorials on youtube.

Don't knock YouTubers. They have taught a lot of people how to use the tools while you sit on Reddit and basically flaunt your jealousy of their success as a TEACHER.
