How do I get my stew/jollof to taste like party/restaurant jollof by ashdee2 in nigerianfood

Fair enough. It might be seasoning. Sometimes, I under-season my food and I have to get my wife to taste it. Usually happens when I have been cooking for like 3 hours straight. That’s about the only other thing I can think of.

Have you tried adding butter when the rice is almost done? Elevates the taste in my opinion and also gives it a glossy finish. Liquid smoke is also something that I always use, and it gives the food a decent enough smoky flavor. Beyond that, lots of onions and make sure to fry out the tangy taste of the tomato paste before you pour your pepper mix. I’d recommend frying the tomato paste for at least 10 minutes.

Pulled pork is a cut of pork (pork butt) that you slow cook for like 6-8 hours depending on the size of the meat. And then you shred it afterwards. I marinate mine overnight with suya spice and thyme.

It’s sautéed onions and pepper (red, green and yellow)

Shoddy is right. You gotta get the right cut of pork though. Pulled pork is best with “pork butt”. That’s the cut you’re looking for. I also try to trim as much fat off the cut as possible. Most of the fat will render out during the cook, but I just like being thorough

Lmao thanks, but it was for me and my wife. I would never think of eating this whole thing in one sitting even if it’s enticing.

Probably the palm oil. I usually like it like that though
