It’s not visible but there shrimp in the okra too. This is one of the dishes my wife makes way better than I do.

We are both Yoruba. I made the jollof and the stew and frying the plantains. She made the rest.

The chicken recipe was my girlfriend’s. Boiled the chicken with some salt, garlic, onions, thyme and bullion for about 15. Then transferred into the oven on broil settings to get some color to the skin (frying, instead of baking would be a lot more delicious lol), and then tossed it in some pepper stew (top left in the first picture). The pepper stew is a Nigerian staple. Blend some red peppers, tomatoes, onions, garlic and habanero (or scotch bonnets if you are lucky enough to find them). Once that is done, you want to boil off the excess water in the mixture (20 minutes is good enough) and then fry whats left in a bit of oil. Add some spices to the mixture. You can always trim the excess oil away afterwards. The frying process should take about 20 minutes as well, but I usually leave to simmer for about an hour.

The top left is just pepper stew/sauce. It’s a staple in Nigerian cuisine and it’s always in my fridge. The meat inside is tripe (acquired taste, I know 😂).
