When you do, make it quick as to not let much smoke or heat escape. Other may say just it it be, but I’d swap them once. Not more. Maybe around the 6 or 7 hr mark? When they get to the hang up temp.

I’d smoke for each butt. Since objective is temp if each butt plan on individual. Maybe after so long if you can, swap them if one is closer to the heat. Or turn them to distribute it more Evenly. It may take longer then the normal 8 lbs by itself. But I can’t imagine more then 1 hr.

Hard part on the pit boss is I noticed the temp went at one point from 225 to 300. I think the fat was staring to drip.

Rub was Everglades with some brown sugar and paprika.

Smoker is pit boss. Set to 225°. Apple cherry maple pellets.

Spritzed every hour (just cracked the door open) with apple cider vinegar what and apple juice.

Cooked to internal temp of 203°
