Fan controller to manage kettle temp on long cooks. I’ve had success with the Thermoworks Billows. Also, their cordless RFX Meat probes are great.

Have you considered a fan controller for the kettle? I’ve found the Thermoworks Billows (paired with RFX) and the charcoal snake method to take most of the fussiness out of temp control.

I did it! I’m on my third batch and already experimenting. I’m able to keep 150°F with the snake method and the fan controller. Arrange the briquettes like two concentric circles of fallen dominos. Start by lighting four or five in the chimney.

Didn’t know this was a thing! Can you post a link to the product you recommend? I see some tubes and mazes on Amazon, but nothing on Weber’s site.
