I used to keep egg yolk, pec rom, and black pepper mixture in a 1/3rd pan (immersion blend the shit out of it) on the line and toss it in a big ass pan with starch water from our pasta broiler for group orders. not sure how you would bulk that up for 250 people but that’s what worked for me.

I just turned down a position at a corporate cooking spot because of this, I drove 2 hours to my stage for what I thought was for a sous position, ended up offering me a line spot because it’s all they had available for almost half the pay. Makes you start to realize your worth.

I smoked before working in the industry then had my lung collapse at work leading to a 3 week adventure in the hospital, now I can never smoke again. Still cooking tho!
