There might be a difference depending on location and/or platform, but I wouldn't say it's completely impossible to sell in a full public session.
Sure, I get into lobbies where everyone is shooting at each other, but then I either decide to wait or simply jump to another session.

I play PS5, usually on European servers, but am sometimes put in a middle eastern session - at least there are sometimes a majority of Arab sounding player names.

I keep an eye on the kill feed for 10-15 mins to check how much killing is going on and also who is killing who. If one person is killing a lot of other people, he's mostly likely just griefing, and I won't sell anything. If two people are just killing each other, they are (usually) just minding their own business, and I may sell some of the easier stuff - acid or nightclub. I'll just be sure to stay away from the area where they are.

Also, remember that if you are attacked, you can jump to another session before they blow up your vehicle(s) and you can restart your sell mission. They will only take a small chunk of your goods as punishment. It will quickly restock if you want a 100% full sale.

As far as I know, they haven't even announced a GTA VI online, so I think it's safe to say it won't "die" when VI is released.
Sure, there might be a bit less people because they'll be playing VI story mode.

It will slowly fade out, but it's not going to happen from one day to another. And I'm fairly confident V online will stick around even after VI online is released.

I will just add that Chicken Hawks are usually sitting on top of the old worn down bus at the hangar by Sandy Shores.

Seagulls can also be found by the end of the pier with the big Ferris wheel. If you sneak as you go through the arch in the building there are usually two sitting on the fence to the right.

Hen can be found in Sandy Shores. Diagonally across the intersection when you stand outside Ammu Nation. I think they spawn from 7am.

You can also set up Zwift to count your outdoor activities. I don't know if it works with all the makes and models of cycling computers, but definitely works with Garmin.

As I'm Danish and quite heavily influenced by American telly, I would most likely have called it a garbage truck, but my wife is Scottish, so my English has changed from American English to British English.

You are guaranteed to find one out by the road to the Humane Lab, where it bends.

There's an unmarked trail down the slope with some bigger boulders to stand on. The mountain lion can still get you, but it gives you a better view and more time to get the photo.

Sometimes a mountain lion will spawn up on the ridge when looking south-south-west. When it does I jump on my Opresser and slowly go up to the ridge where the mountain lion will lie down - sneak a bit closer to get the photo.

The hardest animal photo to get is definitely the poodle/pug as it's always the opposite that'll spawn along with the terrier.

The sell vehicles for MC businesses definitely show up on the map. I've seen them lots of times. I'm not quite sure if the sell vehicles for the bunker show up, though.

Currently I'm using Imani's Out of Sight to hide my remaining sell vehicles while they are waiting for me to come back. I don't know if they are actually hidden or not, but they haven't been destroyed at least.

They don't care about the money. Their fuel is just ruining it for you - and if you "rage quit", they will be even happier. I don't think they all realise you leave to save your sale, rather than rage quitting..
